How can I tell if I still have Apple Care coverage?
I just want to make sure that my laptop is still covered while I am still in school, because if not, I want to come in and purchase a new Apple Care plan.

Apple Care extends your original one year coverage for an additional 2 years. You cannot buy it after your 1 year warranty has expired and if you have already bought it, you cannot buy again to extend beyond the 3rd year.
